Mountain cuisine
The Vall de Boí cuisine is a mountain cuisine based on natural resources and prepared following very old traditions. Above all, it is a seasonal cuisine, which uses the products of the land in each season of the year. Organic beef and lamb, animals raised in the same area, are very important.
It is based on the basic local products: potatoes, vegetables, lamb, pork, beef, mushrooms, river trout... It is a cuisine with a very old tradition that takes advantage of all the resources that these lands have to offer. Following the tradition, a slightly elaborate and high-calorie gastronomy, suitable for facing the long winter months, but which is currently being reinterpreted to adapt the dishes to the needs and tastes of the moment.
